Ingredients
1 kg mixed dried fruit *
1 cup iced, chopped apricots
3/4 cup chopped cherries, chopped
1/4 cup chopped candied ginger
1/3 cup walnuts or almonds *, coarsely chopped
1/2 cup brandy
Canola oil aerosol
1 cup of lightly packed brown sugar
1/4 cup of vegetable oil
4 eggs (59g)
1 teaspoon of vanilla essence
1/4 cup of juice of freshly squeezed orange (from 1 orange)
2 cups of plain gluten-free flour
1/2 cup of gluten-free baking flour
1 teaspoon of mixed spices *
1/2 teaspoon of cinnamon *
Bleached almonds to decorate *
1 meter long Christmas ribbon or plastic Christmas decoration e

In a large bowl, mix dry fruits, chopped apricots, cherries and ginger. Pour over the brandy and pass through. Cover and stay up at night. Add the nuts and throw through.

Preheat oven to 150 ° C. Prepare a round 20 cm mold, lightly sprayed with oil and covered with a non-stick parchment paper. Make sure the paper is 5 cm above the edge of the cake pan.

Place brown sugar, oil, eggs, orange juice and vanilla essence in a medium bowl. Beat until smooth and brown slightly. Add to the fruit mixture and mix well.

In another bowl, sift the flours, mix the spices and cinnamon and mix. Fold the flour mixture into the fruit mixture making sure to mix the flour well. Pour the mixture into the prepared pan, leveling even with the back of a spoon. Gently tap the pan on the bench to eliminate air bubbles.

Bake the preheated oven for 3 hours or until a skewer is inserted in the center and comes out clean. Remove from oven, wrap in a clean cloth and let the cake cool.

Decorate the cake with blanched almonds; place them evenly on the top of the cake, pressing gently on the cake mix. You can wrap Christmas ribbon around the cake or place the plastic decoration on top (press the rod into the cake).
